I currently love anything pistachio and I always love chai.
So when I came across this recipe for Pistachio Chai muffins on Pinterest, I had to try it.
Although muffins aren't really my go-to breakfast, they make a perfect mid-morning or afternoon snack with a cup of tea.
Preheat oven to 375 degrees
Pour milk into a medium bowl and drizzle with lemon juice. Let sit for 3 minutes without moving or stirring.
Whisk together flours, sugar, baking powder, baking soda, salt, and tea in another bowl.
Stir oil, vanilla, and egg into bowl with milk and lemon.
Stir wet ingredients into dry all at once.
Scoop batter into muffin trays and sprinkle top with pistachios.
Bake for 16-18 minutes.
Mix together glaze ingredients and drizzle over muffins
(I used very little, which is why you can't see the glaze in the picture)
Sit back, relax, and enjoy!
