Are you craving some Italian flavors without all of the carbs? This caprese style chicken really hits the spot!
I can't remember how I first came up with this recipe, but it's been a staple in our house for a while.
It's also super easy to make kid friendly (or husband friendly for that matter). I just added a side of noodles and cut up the chicken for my toddlers and we had a happy family dinner.
Bake chicken in a pan with a little olive oil, about 10 minutes a side with the lid on, this helps keep the chicken moist.
Halve and quarter cherry tomatoes, mix in a bowl with a little olive oil and balsamic vinegar. Add a little salt and pepper.
Mix ricotta cheese with Italian seasoning.
Once chicken is cooked place on a plate with a dallop of the ricotta cheese mixture and spoon tomato mixture over the top.
I like to serve mine with salad to get some veggies in! I also sprinkle some red pepper flakes over the top, because I think everything can use a little heat.
This is a great go to if you need a meal without any yellows (aka carbs for my non fixers).
21 Day Fix breakdown: 1.5 red (chicken + ricotta cheese), 1 purple (tomatoes), .5 orange (balsamic + olive oil mix on the tomatoes), 1 tsp (olive oil for cooking the chicken)
